Spiced Applesauce Cake with Cinnamon Cream Cheese Frosting

Hello!

Did you have an enjoyable weekend? Other than running a few errands and taking Christopher out for sushi Saturday night, we relaxed. My kind of weekend! I'm a home body and there's just no place like home-sweet-home!


Most weekends I like to spend a bit of time in the kitchen cooking and baking. This weekend I tried a new recipe, this Spiced Applesauce Cake with Cinnamon Cream Cheese Frosting by Stephanie Cooks, found on Pinterest just last week. I knew it would be a winner and it was!

I made cupcakes instead of cake. I like the individual servings. And I like to frost them right before serving so they can be warmed a little first. Ahhh....warm, moist cake topped with cool cream cheese frosting. Life is good and sweet!

watching - this little guy run around the house playing with anything and everything he comes into contact with. :)

eating - pumpkin cookies with caramel frosting that I baked this weekend. Yes, another batch because we polished off those I baked two weeks ago!

wearing - pajamas and slippers. 

enjoying - Christopher's last day off-track before he heads back to school tomorrow. Christopher wants to watch a movie today...Wallace and Gromit - The Curse of the Ware-Rabbit.

looking forward to - Thanksgiving Day. It'll be a lovely day of cooking, eating and relaxing with the family.

listening to - Pandora Internet Radio, 70's and 80's tunes over the weekend. Steely Dan, Micheal McDonald, Led Zepplin, etc.

thinking about - Christmas. What kind of cards and ornaments do I want to make for everyone.

excited about - next weekend when Christopher goes to camp and my man and I get to spend time together. All three of us look forward to these weekends.

loving - the sunny and warm temperatures we had yesterday and today. Tomorrow is supposed to get colder.

working on - water color painting. I'm in the very beginning stages and enjoying the process and learning.

wanting - to start a new crochet project. Trying to decide on one.

needing - a little kick start to get back into the swing of the week. My cup of coffee hasn't really helped in that department.

Mediterranean Crunch Salad

Hello!

At the risk of sounding like a broken record....where do the days go? Didn't we just begin the week? And here we are at Wednesday! Another blink of the eye and it'll be Friday and we'll be looking forward to the holiday weekend! Now that's a good thing! I love weekends with my boys and having three days to play instead of two sounds fabulous to me!

I thought I'd share a healthy salad I made the other day with a recipe from Whole Foods. I've been hearing that a lot of you are trying to eat healthier.



This salad is so good, and healthy, and crunchy, and beautiful! I must warn you, however, you may want to add a little of your favorite salad dressing or some avocado or cheese...a little something extra to jazz it up a bit. You know? Like some fat! ;) I make my own salad dressing and had some balsamic vinaigrette to add. Now we were talking! Good stuff!

I hope you give it a try. Let me know if you do and what you changed or added. It's a great salad for experimenting with different ingredients. I thought some fresh cut corn would be a nice addition.

Macaroni & Cheese



We woke up to a dusting of snow on the ground here in the Raleigh, North Carolina area. Brrrrr! It's been unseasonably cold. It seems that Mother Nature decided to skip the last part of autumn and head straight into winter.

Cold weather means it's time for comfort food, something that's warm and filling of body and soul. In our house, it's time to make home baked Macaroni and Cheese!

From the Pasta book of Food & Wine comes this fabulous recipe that my in laws ask me to cook when they come to visit. It's the recipe my husband asks me to make for his birthday. It's that good!

Serves 4 (More like 6)

5 tbls. Butter
3 tbls. flour
2 cups milk
3/4 Pound Sharp Cheddar Cheese, Grated (about 3 1/2 cups)
1 1/2 tsp. Dijon mustard
1/8 tsp. cayenne
1 tsp. salt
1/4 tsp. fresh-ground black pepper
3/4 pound elbow macaroni
2 tbls. chopped fresh parsley

1. In a medium saucepan, melt 3 tablespoons of the butter over moderate heat. Add the flour and cook, whisking for 1 minute. Whisk in the milk. Still over moderate heat, bring to a boil, whisking. Reduce the heat and simmer for 5 minutes, stirring occasionally. Remove from the heat. Add the cheese, mustard, cayenne, 3/4 teaspoon of the salt and the pepper and whisk until the cheese melts.

2. In a large pot of boiling, salted water, cook the macaroni until almost tender but still slightly underdone, about 7 minutes. Drain.

3. Heat the oven to 350 degrees. Butter a 1 1/2 quart baking dish. Combine the macaroni and cheese sauce. Transfer to baking dish.

4. Melt the remaining 2 tablespoons of butter and combine with the bread crumbs, chopped fresh parsley and the remaining 1/4 teaspoon salt. Sprinkle the bread crumbs over the macaroni. Bake until the top is beginning to brown and the sauce is bubbling, approximately 30 minutes.
